There's nothing fancy here. Just a really awesome, perfect for summer, four ingredient - pico de gallo. Jay has been whipping this up as an appetizer or a contribution to a potluck for the last couple of year. People have told us we should bottle it - it's that addicting - but instead, I thought I would share the recipe.
Jay's Totally Addicting Pico de Gallo recipe
What you'll need:
- 3 large heirloom tomatoes (the firmer the better)
- 1 large white onion
- 2 limes
- 1 cup cilantro
You don't even need directions - right?! Just dice everything up, throw it in a bowl, squeeze the fresh limes, and stir it up. We typically add a few dashes of garlic salt and ground pepper to the mix for an extra kick.
The great thing about this pico is that you can adjust the recipe to your liking. We love onion and cilantro more than we love tomatoes, but if you don't, just add more to the mix. We're also pretty liberal with the lime juice which gives it a tart and acidic burst.
I'm pretty sure if you make this - you're going to love it. Every time Jay serves it, people (ok, it's me!) hover around to get some more! And the best part is, if you have any left over, it gets even better overnight!
